Mutton biryani made easy in oven

Hi Once again,
         Recently I went  to my friend's for her son's birthday.she made chicken biryani which was splendid.I asked for recipe right away.I was so anxious i wanted to try it the very next day but my hubby bought mutton but i wanted to try biryani anyway ,so i made my own recipe out of it & it came out very well.
         This is not authentic but it fits in every one's schedule & tastes very good.


Ingredients:
 For Mutton Curry:                                                                            
        Mutton        =2 lbs
        Cloves        =6 no
        Cinnamon   =1 no
        peppercorns=10 no
        cumin         =1/2 tbsp
        onion          =1 chopped
        green chillies=10 no
        ginger garlic paste=2 tbsp
        red chili powder=3 tbsp
        dhaniya powder =3 tbsp
        garam masala    =1 1/2 tbsp
        pepper powder =1 tbsp
        mint chopped    =1 cup
        lime juice          =1 tbsp
        turmeric            = 1/2 tbsp
        salt                   =acc to taste
        butter               = 1 tbsp
        oil                    = 1 tbsp

For Rice :
       Basmati rice     = 4 cups {wash & soak for 10 min}
       Cinnamon        =1 inch
       Cloves             = 5 no
       Cardamon       =1 no
       peppercorns      =10 no
       shajeera           =1 tbsp
       javitri              =2
       bay leaf           = 2 no
       star anise         = 1 no
      marati moggu    = 2 no
      salt
      butter               = 1 tbsp

For Oven  :
      cilantro           = 1 cup chopped
      fried onions    = acc to taste
      ghee roasted cashews = 10 no
      saffron milk  for color
      butter            = 1 tbsp


Preparation:
    For curry:
       chop & clean the goat.
       Take pressure cooker,add butter and oil,once it is hot add whole spices to it,fry it for half min
       then add sliced onions with split green chillies, add salt & turmeric,fry till onions turns golden brown.
       now add ginger garlic paste,fry till raw smell goes away{ may take 2/3 min}
       add meat,fry for 3-5 min on high flame but careful not to burn
       now reduce the flame to medium & add chili powder,dhaniya powder,garam masala,chopped pudina &lime juice ,mix everything well and fry it for 5 min
       now close the lid & pressure cook it for 6-7 whistles.when you open the lid if it is watery,then keep it on low flame without lid
      gravy should be thicker in consistency and is ready

  For Rice :
   to make it easy i just cook rice in rice cooker and i do like this
    switch the cooker to cooking mode , add butter,once it melts add whole spices ,fry for 1min
    add ginger garlic paste & fry for 2 min
    add rice & fry for 1 min
    for 1 cup of rice add 1 1/2 cup of water,add salt.it takes 15-20 min to cook
{If your cooker switches to warm ,then just push it again to cook mode or unplug and plug it again to cooking mode}

Then comes the oven part:
     Boil milk with saffron for 1 min
     ghee roast cashews
     I use store bought fried onions,if you don't have just take a onion chop it vertically ,it should be thin & fry it to golden brown color
     pre-heat the oven to 375 F ,take the baking dish & grease it with ghee
    now add the mutton gravy on the bottom layer & then add layer of rice ,if you have large quantity just repeat the layers
    on the top,add chopped cilantro,fried onions ,cashews,butter,lime & sprinkle saffron milk.
    cover it with aluminium foil and bake for 45min.just after 20 min into baking mix it thoroughly and taste for salt and add it acc to your taste,u can also add lime if you want and just bake for remaining 25 min .

                  Serve it with raita , chicken /mutton curry.  enjoy & have nice day
